Description
In this workshop setting, a USDA specialist explains the formula used for calculating USDA slaughter hog grade. Then four classes (five each) of live slaughter hogs are shown at the side, front, back and walking, enhancing evaluation and scoring ability for your student judges. Following each class, the expert comments on individual hogs and assigns final score derived from the estimation of last rib fatback thickness and degree of muscling.
